Find Your Bliss!!
Life is crazy. Sometimes in the midst of doing everything we are obligated to do, we lose time for the things we truly love to do. After an insane 14 days thrown into the deep end to sink or swim in the great unknown waters of my life's new pursuits I have decided that Valentines Day is the perfect occasion to take some time out and give myself a little tender love and care.
In doing so I have come to appreciate the valuable gift of silence as I spent a silent hour today pouring through my amazing new recipe book (albeit a slightly older publication, I was a little delayed on the uptake! However I maintain that it always takes time to uncover the shiniest diamonds). Nicole Joy Inspire's "Why It's Perfectly Acceptable to Eat Dessert for Breakfast" is nothing short of awe inspiring. Her touching personal anecdotes and mindful quotes that promote self adoration and pursuit of the dreamiest of dreams connected with me and encouraged me to kick harder whilst trying to stay afloat in my ocean. But that's not even the best bit! The nutrient dense, refined sugar free, mouth watering dessert recipes are stunningly beautiful to look at and absolutely divine on the palette!! I have tinkered a little in the kitchen since being inspired by the delightful recipes in Nicole's book. I have been working on a number of Bliss Ball recipes for my little healthy cafe at Body Classique Health, Fitness and Dance Centre (www.facebook.com/bodyclassiquefitness). I love the name "Bliss Balls" as it conjures up feelings of sheer joy and satisfaction as you devour them. They certainly do put a big smile on my face when I make them and enjoy them but not only that, they act as a reminder to always seek out a little bit of happy everyday. Some days and weeks are tough but as is often the case, it is usually because we are hard at work pursuing a big dream that requires lots of smaller steps to join together along the way. Lime and Coconut Bliss Balls Ingredients: 1/2 cup almonds 1/2 cup cashews Juice of 3 limes (and zest if you like) 1 1/2 cups of pitted and chopped medjool dates Desiccated coconut for rolling Method: 1. Whiz the nuts in a food processor until fine and crumbly 2. Add dates and lime juice and process 3. Using wet hands, roll mixture into bite sized balls and roll in coconut until coated 4. Store in fridge in airtight container and try not to eat them all at once!
